Ingredients

- 1 cup lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic and cook for another minute.
- Stir in lentils, diced tomatoes, cumin, salt, and pepper.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 25-30 minutes until lentils are tender.
- Adjust seasoning as needed and serve hot.
Notes
- Rinse lentils before adding to the pot.
- Feel free to add other vegetables like spinach or zucchini.
- You can blend the soup for a creamier texture if desired.
