Ingredients

- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 cup of chopped spinach
- 1 cup of cherry tomatoes, halved
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
- While quinoa cooks, heat olive oil in a pan over medium heat.
- Add chopped spinach and cherry tomatoes to the pan.
- Season with garlic powder, salt, and pepper.
- Sauté for about 5 minutes until spinach wilts and tomatoes soften.
- Once quinoa is done, fluff it with a fork.
- Add the sautéed vegetables to the quinoa and mix well.
- Serve warm and enjoy your meal.
Notes
- Rinse quinoa to remove bitterness.
- Adjust seasoning to your preference.
- You can add other vegetables as desired.
