Ingredients

  • 1 cup of quinoa
  • 2 cups of vegetable broth
  • 1 cup of chopped spinach
  • 1 cup of cherry tomatoes, halved
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  4. While quinoa cooks, heat olive oil in a pan over medium heat.
  5. Add chopped spinach and cherry tomatoes to the pan.
  6. Season with garlic powder, salt, and pepper.
  7. Sauté for about 5 minutes until spinach wilts and tomatoes soften.
  8. Once quinoa is done, fluff it with a fork.
  9. Add the sautéed vegetables to the quinoa and mix well.
  10. Serve warm and enjoy your meal.

Notes

  • Rinse quinoa to remove bitterness.
