Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of diced bell peppers
- 1 cup of chopped broccoli
- 1 cup of cherry tomatoes, halved
- 2 tablespoons of olive oil
- Salt to taste
- Pepper to taste
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add bell peppers and broccoli. Sauté for 5 minutes until tender.
- Add cherry tomatoes, salt, pepper, garlic powder, and onion powder. Cook for another 3 minutes.
- Fluff the cooked quinoa with a fork and mix in the sautéed vegetables.
- Serve warm and enjoy your healthy dinner!

- Rinse quinoa to remove bitterness.
