Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of diced bell peppers
  • 1 cup of chopped broccoli
  • 1 cup of cherry tomatoes, halved
  • 2 tablespoons of olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  4. In a pan, heat olive oil over medium heat.
  5. Add bell peppers and broccoli. Sauté for 5 minutes until tender.
  6. Add cherry tomatoes, salt, pepper, garlic powder, and onion powder. Cook for another 3 minutes.
  7. Fluff the cooked quinoa with a fork and mix in the sautéed vegetables.
  8. Serve warm and enjoy your healthy dinner!
