- 1/2 cup crushed pineapple, drained
- 1/2 cup shredded coconut
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine mashed bananas and melted butter.
- Add sugar, beaten egg, and vanilla extract. Mix well.
- Stir in baking soda and salt.
- Add flour, crushed pineapple, and shredded coconut. Mix until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 60-65 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before slicing.
