- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, chopped
- 2 potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup frozen peas
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and minced garlic. Cook until the onion softens.
- Add the carrots, potatoes, diced tomatoes, and beef broth. Stir well.
- Bring the mixture to a boil, then reduce heat to low.
- Add Worcestershire sauce, oregano, salt, and pepper. Stir to combine.
- Cover and let simmer for about 30 minutes, or until the vegetables are tender.
- Add the frozen peas and cook for an additional 5 minutes.
- Serve hot and enjoy your soup.
Notes
- Feel free to add other vegetables like bell peppers or corn.
- For a spicier soup, add red pepper flakes.
- Leftovers can be stored in the fridge for up to 3 days.
