A rich and creamy chocolate mousse perfect for Groundhog Day celebrations.
Ingredients

- 1 cup heavy cream
- 1 cup dark chocolate, chopped
- 3 large eggs
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a saucepan, melt the dark chocolate over low heat. Stir until smooth. Remove from heat and let cool slightly.
- In a mixing bowl, beat the eggs with sugar until light and fluffy.
- Add the melted chocolate and vanilla to the egg mixture. Stir until combined.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture until no streaks remain.
- Divide the mousse into serving dishes and refrigerate for at least 2 hours.
- Serve chilled and enjoy!
Notes
- You can use milk chocolate for a sweeter mousse.
- Make sure the chocolate is cool before adding to the eggs to avoid scrambling.
- For a lighter mousse, fold in more whipped cream.
