Ingredients

  • 1 can (15 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups shredded cheese
  • 8 corn tortillas
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain excess fat.
  3. Add garlic powder, cumin, salt, and pepper to the beef. Stir to combine.
  4. In a large baking dish, spread a thin layer of enchilada sauce on the bottom.
  5. Layer four corn tortillas over the sauce.
  6. Spread half of the beef mixture over the tortillas.
  7. Add half of the black beans and a third of the cheese on top.
  8. Repeat the layers with the remaining tortillas, beef, black beans, and cheese.
  9. Pour the remaining enchilada sauce over the top layer and sprinkle with the rest of the cheese.
  10. Bake in the oven for 25-30 minutes, until the cheese is bubbly and golden.
  11. Let it cool for a few minutes before serving.
