- 1 cup all-purpose flour
- 1 cup Greek yogurt
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the Greek yogurt, sugar, vegetable oil, eggs, and vanilla extract.
- Combine the wet and dry ingredients, mixing until just combined.
- Fill muffin cups about two-thirds full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool for a few minutes before serving.
Notes
- Make sure not to overmix the batter.
- Check muffins for doneness with a toothpick.
- Feel free to add berries or chocolate chips for extra flavor.
