- 1 cup gluten-free oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mash the ripe bananas with a fork until smooth.
- Add almond butter, honey or maple syrup, and vanilla extract. Mix well.
- Stir in the gluten-free oats, baking soda, and salt until combined.
- If using, fold in the chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are lightly golden.
- Let the cookies cool on a wire rack before serving.
