Ingredients

  • 1 lb ground beef
  • 1 cup diced onions
  • 2 cups shredded cheese
  • 1 can black beans, drained
  • 1 cup salsa
  • 8 small tortillas
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onions and cook until soft.
  3. Add ground beef and cook until browned.
  4. Stir in black beans, salsa, and salt. Cook for 5 minutes.
  5. Remove from heat and stir in shredded cheese.
  6. Preheat oven to 350°F (175°C).
  7. Fill each tortilla with the beef mixture and roll them up.
  8. Place rolled tortillas in a baking dish and sprinkle with remaining cheese.
  9. Bake for 15 minutes or until cheese is melted.
  10. Let cool for a few minutes and serve warm.
