Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 600g cream cheese
  • 150g sugar
  • 200ml sour cream
  • 3 eggs
  • 1 tsp vanilla extract
  • 300g mixed berries (raspberries, blueberries, blackberries)
  • 2 tbsp cornflour

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Crush the digestive biscuits in a bowl.
  3. Mix the crushed biscuits with melted butter.
  4. Press the mixture into the bottom of a springform cake tin.
  5. In a large bowl, beat the cream cheese and sugar until smooth.
  6. Add in the sour cream, eggs, and vanilla extract; mix until well combined.
  7. Stir in the cornflour.
  8. Fold in the mixed berries gently.
  9. Pour the cheesecake mixture over the biscuit base.
  10. Bake for 45-50 minutes until set.
  11. Let it cool, then refrigerate for at least 4 hours before serving.
