Ingredients

- 200g digestive biscuits
- 100g unsalted butter, melted
- 600g cream cheese
- 150g sugar
- 200ml sour cream
- 3 eggs
- 1 tsp vanilla extract
- 300g mixed berries (raspberries, blueberries, blackberries)
- 2 tbsp cornflour
Instructions
- Preheat your oven to 160°C (320°F).
- Crush the digestive biscuits in a bowl.
- Mix the crushed biscuits with melted butter.
- Press the mixture into the bottom of a springform cake tin.
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add in the sour cream, eggs, and vanilla extract; mix until well combined.
- Stir in the cornflour.
- Fold in the mixed berries gently.
- Pour the cheesecake mixture over the biscuit base.
- Bake for 45-50 minutes until set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- Make sure the cream cheese is at room temperature for easier mixing.
- Don’t overmix the batter to avoid cracks.
- Use fresh berries for the best flavor.
