- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained and rinsed
- 1 cup corn, frozen or canned
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Shredded cheese for topping (optional)
Instructions
- In a large skillet, heat a bit of oil over medium heat.
- Add the chopped onion and garlic. Sauté until soft, about 3-4 minutes.
- Add the ground beef. Cook until browned, breaking it up with a spatula.
- Stir in the diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and pepper.
- Simmer for 15-20 minutes, stirring occasionally.
- Serve hot, topped with cheese if desired.
Notes
- Don’t overcook the beef; it should be browned but not dry.
- You can add more spices for extra flavor.
- Serve with rice or bread for a complete meal.
