- 1 lb ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup pumpkin puree
- 1 cup vegetable broth
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups spinach, chopped
- 1 cup cooked rice
Instructions
- In a large pot, heat a little oil over medium heat.
- Add the chopped onion and garlic. Cook until soft.
- Add the ground turkey. Cook until browned.
- Stir in pumpkin puree, vegetable broth, thyme, salt, and pepper.
- Bring the mixture to a simmer.
- Add the chopped spinach and cooked rice. Stir well.
- Let it cook for 5 more minutes. Serve hot.

- Use fresh spinach for a better taste.
- Brown the turkey well for added flavor.
