Instructions

  1. In a large pot, heat a little oil over medium heat.
  2. Add the chopped onion and garlic. Cook until soft.
  3. Add the ground turkey. Cook until browned.
  4. Stir in pumpkin puree, vegetable broth, thyme, salt, and pepper.
  5. Bring the mixture to a simmer.
  6. Add the chopped spinach and cooked rice. Stir well.
  7. Let it cook for 5 more minutes. Serve hot.
