- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon dried thyme

Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until soft.
- Stir in minced garlic and cook for 1 minute.
- Add white beans, vegetable broth, and thyme.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Use an immersion blender to blend soup until smooth, or leave it chunky if you prefer.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
