Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add white beans, vegetable broth, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Use an immersion blender to blend soup until smooth, or leave it chunky if you prefer.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.
