Ingredients

  • 1 cup of rice
  • 2 cups of water
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 cup of mixed vegetables
  • 1 teaspoon of garlic powder

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, combine the rice, water, olive oil, and salt.
  3. Bring the mixture to a boil over medium-high heat.
  4. Once boiling, reduce heat to low and cover the pot.
  5. Let it simmer for 18 minutes or until the water is absorbed.
  6. In the last 5 minutes of cooking, add the mixed vegetables on top without stirring.
  7. Remove the pot from heat and let it sit covered for another 5 minutes.
  8. Fluff the rice with a fork, add garlic powder, and serve warm.

Notes

  • Use any vegetables you like or have on hand.
  • Make sure to rinse the rice to remove excess starch.
  • Do not lift the lid while the rice is cooking to keep the steam in.
