Instructions

  2. In a pot, bring water to a boil and add salt.
  3. Stir in the rice and olive oil.
  4. Cover the pot and reduce heat to low.
  5. Cook for 18-20 minutes until the water is absorbed.
  6. Add mixed vegetables and cooked chicken (if using) to the pot.
  7. Stir gently and cover for another 5 minutes.
  8. Fluff the rice with a fork and serve warm.
