A simple and delicious rice dinner that anyone can make.
Ingredients

- 1 cup of rice
- 2 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 cup of mixed vegetables (carrots, peas, corn)
- 1 cup of cooked chicken (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, bring water to a boil and add salt.
- Stir in the rice and olive oil.
- Cover the pot and reduce heat to low.
- Cook for 18-20 minutes until the water is absorbed.
- Add mixed vegetables and cooked chicken (if using) to the pot.
- Stir gently and cover for another 5 minutes.
- Fluff the rice with a fork and serve warm.
Notes
- Use broth instead of water for more flavor.
- You can replace chicken with tofu for a vegetarian option.
- Adjust cooking time based on the type of rice.
