Ingredients

  • 2 cups pasta (any shape)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (balsamic or red wine)
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot. Add the pasta and cook according to package instructions.
  2. While the pasta cooks, prepare the vegetables. Dice the cucumber, bell pepper, and onion.
  3. Once the pasta is cooked, drain and rinse it under cold water to cool.
  4. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  5. In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
  6. Pour the dressing over the pasta salad and mix well.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Make sure to rinse the pasta to stop the cooking process.
