- 1 lb of chicken thighs
- 2 cups of diced potatoes
- 1 cup of carrots, sliced
- 1 onion, chopped
- 2 tablespoons of olive oil

- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix the chicken, potatoes, carrots, and onion.
- Add olive oil, garlic powder, thyme, salt, and pepper. Toss everything until well coated.
- Spread the mixture in a single layer on a baking sheet.
- Bake for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and let it rest for 5 minutes before serving.
