A simple and delicious easy enchilada bake recipe perfect for beginners.

- 12 corn tortillas
- 2 cups shredded chicken
- 1 can black beans, drained and rinsed
- 2 cups enchilada sauce
- 2 cups shredded cheese
- 1 cup diced onions
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, black beans, onions, cumin, garlic powder, salt, and pepper.
- Spread a layer of enchilada sauce on the bottom of a baking dish.
- Place 4 tortillas on top of the sauce, overlapping them slightly.
- Add half of the chicken mixture on top of the tortillas.
- Sprinkle with 1 cup of cheese.
- Repeat the layers with another 4 tortillas, remaining chicken mixture, and another cup of cheese.
- Add the final layer of 4 tortillas on top and cover with remaining enchilada sauce and cheese.
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Use pre-cooked chicken to save time.
- Feel free to add vegetables like bell peppers or corn.
- Adjust the spice level by using mild or hot enchilada sauce.
