Ingredients

- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 lemon, halved
- 4 garlic cloves, crushed
- Fresh rosemary sprigs
- 2 cups of mixed vegetables (carrots, potatoes, and green beans)
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the chicken under cold water and pat it dry with paper towels.
- Rub olive oil all over the chicken.
- Season the chicken with salt and pepper, inside and out.
- Stuff the cavity with lemon halves, garlic, and rosemary.
- Place the chicken in a roasting pan and surround it with mixed vegetables.
- Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
- Serve with roasted vegetables.
Notes
- Make sure to check the chicken temperature with a meat thermometer.
- You can use any vegetables you like.
- Save leftover chicken for sandwiches or salads.
