Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 lemon, halved
  • 4 garlic cloves, crushed
  • Fresh rosemary sprigs
  • 2 cups of mixed vegetables (carrots, potatoes, and green beans)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken under cold water and pat it dry with paper towels.
  3. Rub olive oil all over the chicken.
  4. Season the chicken with salt and pepper, inside and out.
  5. Stuff the cavity with lemon halves, garlic, and rosemary.
  6. Place the chicken in a roasting pan and surround it with mixed vegetables.
  7. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for 10-15 minutes before carving.
  9. Serve with roasted vegetables.

Notes

  • Make sure to check the chicken temperature with a meat thermometer.
  • You can use any vegetables you like.
