Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup rice
  • Salt to taste
  • Green onions for garnish

Instructions

  1. Season the chicken thighs with Cajun seasoning.
  2. Heat olive oil in a large pan over medium heat.
  3. Add the chicken and cook until browned, about 5 minutes per side.
  4. Remove the chicken and set aside.
  5. Add onion, bell peppers, and garlic to the same pan. Sauté until soft.
  6. Add chicken broth and bring to a boil.
  7. Stir in rice and return the chicken to the pan.
  8. Cover and reduce heat. Simmer for 20 minutes or until rice is cooked.
  9. Fluff with a fork and garnish with green onions before serving.
