- 1 pound chicken thighs, boneless and skinless
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 bell peppers, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup rice
- Salt to taste
- Green onions for garnish
Instructions
- Season the chicken thighs with Cajun seasoning.
- Heat olive oil in a large pan over medium heat.
- Add the chicken and cook until browned, about 5 minutes per side.
- Remove the chicken and set aside.
- Add onion, bell peppers, and garlic to the same pan. Sauté until soft.
- Add chicken broth and bring to a boil.
- Stir in rice and return the chicken to the pan.
- Cover and reduce heat. Simmer for 20 minutes or until rice is cooked.
- Fluff with a fork and garnish with green onions before serving.
Notes
- Make sure not to overcook the chicken.
- Adjust seasoning to your taste.
- Use low-sodium chicken broth for a healthier option.
