Ingredients

  • 1/2 cup cooked chicken or tofu (optional)
  • 2 tablespoons soy sauce (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, combine rice, water, olive oil, and salt. Bring to a boil.
  3. Once boiling, reduce heat to low and cover the pot. Cook for 18-20 minutes.
  4. While the rice cooks, heat a pan over medium heat and add mixed vegetables. Sauté for 5-7 minutes.
  5. If using, add cooked chicken or tofu to the pan and cook until heated through.
  6. Once the rice is done, fluff it with a fork and mix it with the vegetable mixture.
  7. Add soy sauce if desired and mix well.
  8. Serve hot and enjoy your easy rice dinner.
