- 1 lb chicken breast
- 2 cups broccoli florets
- 1 cup rice
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the rice under cold water until the water runs clear.
- In a pot, combine rice and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 18 minutes.
- Meanwhile, season the chicken breast with garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side or until fully cooked.
- Add broccoli florets to the skillet in the last 5 minutes of cooking the chicken.
- Once the rice is done, fluff it with a fork and serve it on plates.
- Slice the chicken and place it over the rice, adding broccoli on the side.
