Ingredients

  • 1 lb chicken breast
  • 2 cups broccoli florets
  • 1 cup rice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the rice under cold water until the water runs clear.
  3. In a pot, combine rice and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 18 minutes.
  4. Meanwhile, season the chicken breast with garlic powder, salt, and pepper.
  5. Heat olive oil in a skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side or until fully cooked.
  6. Add broccoli florets to the skillet in the last 5 minutes of cooking the chicken.
  7. Once the rice is done, fluff it with a fork and serve it on plates.
  8. Slice the chicken and place it over the rice, adding broccoli on the side.
  9. Enjoy your meal!

Notes

  • Make sure the chicken is cooked through by checking that the juices run clear.
  • You can substitute chicken with tofu for a vegetarian option.
