Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 1 carrot, shredded
  • 1/2 cup imitation crab meat, chopped
  • 1/4 cup panko breadcrumbs
  • Soy sauce, for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. Remove from heat and let it sit covered for 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  5. Fluff the rice with a fork and gently mix in the vinegar mixture.
  6. In a bowl, layer the sushi rice, cucumber, avocado, carrot, and crab meat.
  7. Top with panko breadcrumbs for crunch.
  8. Serve with soy sauce on the side.

Notes

  • Make sure to rinse the rice well to remove excess starch.
  • Let the rice cool before adding the vinegar mixture.
