A simple and delicious crockpot white chicken chili recipe for beginners.

- 2 pounds boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (4 oz) diced green chilies
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
Instructions
- Place the chicken breasts in the crockpot.
- Add the white beans, corn, onion, garlic, and diced green chilies.
- Pour in the chicken broth and add the cumin, chili powder, salt, and pepper.
- Stir the mixture gently to combine all ingredients.
- Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and stir in the sour cream.
- If using, sprinkle shredded cheese on top before serving.
- Serve hot and enjoy.
Notes
- Make sure to drain and rinse the beans and corn to reduce sodium.
- Adjust spices to your taste.
- For a thicker chili, mash some of the beans.
