  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the white beans, corn, onion, garlic, and diced green chilies.
  3. Pour in the chicken broth and add the cumin, chili powder, salt, and pepper.
  4. Stir the mixture gently to combine all ingredients.
  5. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken with two forks and stir in the sour cream.
  7. If using, sprinkle shredded cheese on top before serving.
