A simple and delicious crockpot taco soup recipe perfect for beginners.
Ingredients

- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups beef broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
Instructions
- Brown the ground beef in a skillet over medium heat. Drain the fat.
- Add the browned beef to the crockpot.
- Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, beef broth, onion, bell pepper, and garlic.
- Mix everything well.
- Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- Serve hot and enjoy!
Notes
- For a spicier soup, add jalapeños.
- Top with cheese, sour cream, or avocado if desired.
- Store leftovers in the refrigerator for up to 3 days.
