Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain the fat.
  2. Add the browned beef to the crockpot.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, beef broth, onion, bell pepper, and garlic.
  4. Mix everything well.
  5. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve hot and enjoy!

  • For a spicier soup, add jalapeños.
