Ingredients

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Place the beef chuck roast at the bottom of the crockpot.
  2. Add chopped onion and minced garlic on top of the beef.
  3. Layer the sliced carrots and cubed potatoes over the onions.
  4. Pour beef broth and Worcestershire sauce over the entire mixture.
  5. Season with salt, black pepper, and dried thyme.
  6. Cover the crockpot and set it to low for 8 hours or high for 4 hours.
  7. Check for tenderness and serve warm.

Notes

  • For a thicker sauce, mix 2 tablespoons of cornstarch with water and stir it in during the last 30 minutes of cooking.
  • Feel free to add your favorite vegetables.
  • Leftovers can be stored in the fridge for up to 3 days.
