Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Brown the beef cubes on all sides, then transfer to the crock pot.
- Add the carrots, potatoes, onion, and garlic to the crock pot.
- In a bowl, mix beef broth, tomato paste, thyme, salt, and pepper.
- Pour the mixture over the beef and vegetables in the crock pot.
- Cover and cook on low for 8 hours or high for 4 hours.
- Stir before serving and enjoy your stew!
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with water and add it in the last hour of cooking.
- Feel free to add your favorite vegetables.
- Store leftovers in the refrigerator for up to 3 days.
