Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add chopped cauliflower and sauté for a few minutes.
- Pour in vegetable broth, bring to a boil, and then reduce heat.
- Simmer for 20 minutes until cauliflower is tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in heavy cream and season with salt and pepper.
- Serve warm and enjoy.
