Ingredients

  • 1 lb chicken breast, diced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1/2 cup onion, chopped
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced chicken and Cajun seasoning. Cook until chicken is browned and cooked through.
  4. Add chopped onions and sliced bell peppers. Sauté until vegetables are tender.
  5. Pour in heavy cream and chicken broth. Stir to combine.
  6. Add grated Parmesan cheese, stirring until melted and combined.
  7. Mix in the cooked fettuccine. Toss to coat the pasta in the sauce.
  8. Season with salt and pepper to taste. Serve warm.
