- 8 oz fettuccine pasta
- 1 lb chicken breast, diced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup bell peppers, sliced
- 1/2 cup onion, chopped
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the fettuccine according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and Cajun seasoning. Cook until chicken is browned and cooked through.
- Add chopped onions and sliced bell peppers. Sauté until vegetables are tender.
- Pour in heavy cream and chicken broth. Stir to combine.
- Add grated Parmesan cheese, stirring until melted and combined.
- Mix in the cooked fettuccine. Toss to coat the pasta in the sauce.
- Season with salt and pepper to taste. Serve warm.

- Use a meat thermometer to ensure chicken is fully cooked.
- Adjust Cajun seasoning according to your spice preference.
- Fresh vegetables add more flavor, but frozen can work too.
- Leftovers can be stored in the fridge for up to 3 days.
