- 1 lb chicken breast, diced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup chicken broth
- 1 package (8 oz) cream cheese, cubed
- 1 cup corn, frozen or canned
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add diced chicken and cook until browned.
- Stir in white beans, diced tomatoes, chicken broth, corn, chili powder, and cumin.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- Add cream cheese and stir until melted and well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with your favorite toppings.
Notes
- Make sure to chop the chicken into small pieces for even cooking.
- For a thicker chili, let it simmer longer.
- You can add more spices if you like it spicier.
