Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix the flours, sugar, baking powder, baking soda, and salt.
- Add the chopped cranberries and orange zest to the dry ingredients.
- In another bowl, whisk together the orange juice, oil, eggs, and vanilla.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Do not overmix; a few lumps are okay.
- Line a muffin tin with paper liners or grease it.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool slightly before serving.
