- 1 cup cottage cheese
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the cottage cheese and softened butter until smooth.
- Add brown sugar and vanilla extract. Mix well.
- Beat in the egg until fully combined.
- In a separate bowl, combine flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined.
- Fold in the chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until edges are golden.
- Let cool for a few minutes before transferring to a wire rack.
Notes
- Use room temperature butter for easier mixing.
- Do not overmix the dough.
- For softer cookies, take them out when they are slightly underbaked.
