Ingredients

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the pie crust in the oven and bake for 10 minutes or until golden brown.
  3. In a saucepan, whisk together coconut milk, heavy cream, sugar, cornstarch, and salt over medium heat.
  4. Cook until the mixture thickens, stirring constantly.
  5. In a separate bowl, whisk the egg yolks.
  6. Slowly pour a bit of the hot mixture into the egg yolks while whisking to temper them.
  7. Pour the egg yolk mixture back into the saucepan and cook for another 2 minutes.
  8. Remove from heat and add vanilla extract and shredded coconut.
  9. Pour the filling into the baked pie crust.
  10. Let it cool to room temperature, then refrigerate for at least 2 hours.
  11. Top with whipped cream and additional shredded coconut before serving.
