- 1 pre-made pie crust
- 1 cup coconut milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- Whipped cream for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Place the pie crust in the oven and bake for 10 minutes or until golden brown.
- In a saucepan, whisk together coconut milk, heavy cream, sugar, cornstarch, and salt over medium heat.
- Cook until the mixture thickens, stirring constantly.
- In a separate bowl, whisk the egg yolks.
- Slowly pour a bit of the hot mixture into the egg yolks while whisking to temper them.
- Pour the egg yolk mixture back into the saucepan and cook for another 2 minutes.
- Remove from heat and add vanilla extract and shredded coconut.
- Pour the filling into the baked pie crust.
- Let it cool to room temperature, then refrigerate for at least 2 hours.
- Top with whipped cream and additional shredded coconut before serving.
Notes
- Make sure to constantly stir the mixture when cooking to prevent lumps.
- Use sweetened or unsweetened coconut based on your taste preference.
- You can add a sprinkle of toasted coconut on top for extra flavor.
