A delicious coconut chicken rice bowl that’s easy to prepare.
Ingredients

- 2 cups of jasmine rice
- 1 can (400ml) of coconut milk
- 1 lb chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- Salt to taste
- 1 lime, cut into wedges
- Fresh cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and coconut milk. Bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender.
- While the rice cooks, heat olive oil in a skillet over medium heat.
- Add the diced chicken, garlic powder, ginger powder, and soy sauce. Cook until the chicken is no longer pink, about 7-10 minutes.
- Once the rice is done, fluff it with a fork.
- Serve the coconut rice in bowls, topped with the cooked chicken.
- Garnish with cilantro and lime wedges.
Notes
- Make sure to rinse the rice to remove excess starch.
- Cut chicken into small pieces for even cooking.
- Adjust seasoning according to your taste.
- You can add vegetables like bell peppers or snap peas for extra flavor.
