A delicious coconut chicken rice bowl that’s easy to prepare.


Ingredients

  • 2 cups of jasmine rice
  • 1 can (400ml) of coconut milk
  • 1 lb chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt to taste
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and coconut milk. Bring to a boil.
  3. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender.
  4. While the rice cooks, heat olive oil in a skillet over medium heat.
  5. Add the diced chicken, garlic powder, ginger powder, and soy sauce. Cook until the chicken is no longer pink, about 7-10 minutes.
  6. Once the rice is done, fluff it with a fork.
  7. Serve the coconut rice in bowls, topped with the cooked chicken.
  8. Garnish with cilantro and lime wedges.

Notes

  • Make sure to rinse the rice to remove excess starch.
  • Cut chicken into small pieces for even cooking.
  • Adjust seasoning according to your taste.
  • You can add vegetables like bell peppers or snap peas for extra flavor.
