A simple and delicious coconut cake made using cake mix.

- 1 box of white cake mix
- 1 cup of coconut milk
- 1/2 cup of shredded coconut
- 3 large eggs
- 1/2 cup of vegetable oil
- 1 teaspoon of vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cake mix, coconut milk, eggs, oil, and vanilla extract.
- Mix on medium speed for 2 minutes until smooth.
- Fold in the shredded coconut gently.
- Pour the batter into a greased cake pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Frost with coconut frosting if desired, and top with more shredded coconut.

- Ensure all your ingredients are at room temperature.
- Do not overmix the batter to keep the cake light.
- Test the cake with a toothpick to check doneness.
