- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 large egg
- 1 tablespoon vanilla extract
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup granulated sugar (for topping)
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin.
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk together melted butter, milk, egg, and vanilla.
- Combine the wet and dry ingredients until just mixed.
- In a small bowl, mix brown sugar and cinnamon together.
- Fill each muffin cup halfway with batter, then sprinkle cinnamon sugar on top.
- Add more batter to fill the cup to about 3/4 full.
- Top each muffin with the remaining cinnamon sugar.
- Bake for 20-25 minutes or until golden brown.
- Let them cool for a few minutes before serving.
Notes
- Ensure the butter is not too hot when mixing with wet ingredients.
- Don’t overmix the batter; it’s okay if there are some lumps.
- Use a toothpick to check if the cruffins are done; it should come out clean.
