Delicious cinnamon roll muffins that are easy to make and perfect for breakfast or a snack.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk milk, oil, egg, and vanilla extract.
- Combine wet and dry ingredients, stirring until just mixed.
- Spray a muffin tin with cooking spray.
- Fill each muffin cup halfway with batter.
- Mix brown sugar and cinnamon in a small bowl, then sprinkle over the batter.
- Add remaining batter to fill muffin cups almost to the top.
- Bake for 18-20 minutes until golden brown.
- Let cool for a few minutes before serving.
Notes
- Do not overmix the batter to keep muffins fluffy.
- Check muffins with a toothpick; it should come out clean.
- Store leftovers in an airtight container.
