Ingredients

  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk milk, oil, egg, and vanilla extract.
  4. Combine wet and dry ingredients, stirring until just mixed.
  5. Spray a muffin tin with cooking spray.
  6. Fill each muffin cup halfway with batter.
  7. Mix brown sugar and cinnamon in a small bowl, then sprinkle over the batter.
  8. Add remaining batter to fill muffin cups almost to the top.
  9. Bake for 18-20 minutes until golden brown.
  10. Let cool for a few minutes before serving.

Notes

  • Do not overmix the batter to keep muffins fluffy.
  • Check muffins with a toothpick; it should come out clean.
  • Store leftovers in an airtight container.
