- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon, quartered
- 4 garlic cloves, smashed
- Fresh rosemary sprigs
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub the olive oil all over the chicken.
- Season the chicken with salt and pepper, inside and out.
- Stuff the cavity with lemon, garlic, and rosemary.
- Place the chicken in a roasting pan.
- Roast in the oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before carving.
- Serve and enjoy your festive meal!

- Make sure the chicken is at room temperature before roasting for even cooking.
