- 2 cups mixed Chinese vegetables (bok choy, snow peas, carrots)
- 4 cups vegetable broth
- 1 tablespoon soy sauce
- 1 teaspoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a pot over medium heat.
- Add the minced garlic and ginger. Sauté for 1 minute until fragrant.
- Pour in the vegetable broth and bring it to a boil.
- Add the mixed vegetables to the pot.
- Stir in the soy sauce.
- Reduce the heat and let it simmer for 10 minutes.
- Season with salt and pepper to taste.
- Serve hot in bowls.
