- 1 cup chopped bok choy
- 1 cup sliced mushrooms
- 1 cup diced carrots
- 1 cup snow peas
- 1 tablespoon soy sauce
- 1 teaspoon ginger, minced
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable broth over medium heat.
- Add the minced ginger and garlic. Sauté for 1-2 minutes until fragrant.
- Add the chopped bok choy, sliced mushrooms, diced carrots, and snow peas to the pot.
- Pour in the soy sauce and stir well.
- Bring the soup to a gentle boil, then reduce the heat to low.
- Simmer for 10-15 minutes until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot in bowls.
