Ingredients

- 2 cups vegetable broth
- 1 cup water
- 1 cup chopped carrots
- 1 cup chopped bell peppers
- 1 cup chopped broccoli
- 1 cup sliced mushrooms
- 1 tablespoon soy sauce
- 1 teaspoon ginger, minced
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, combine vegetable broth and water. Bring to a boil.
- Add carrots and bell peppers. Cook for 5 minutes.
- Add broccoli and mushrooms. Cook for another 5 minutes.
- Stir in soy sauce, ginger, and garlic. Cook for 2 minutes.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
