A simple and nutritious Chinese mixed vegetable soup.
Ingredients
Scale
- 2 cups vegetable broth
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 cup bok choy, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 2 green onions, sliced
Instructions
- In a pot, heat sesame oil over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Pour in vegetable broth and bring to a boil.
- Add mixed vegetables and bok choy, cook for 5-7 minutes.
- Stir in soy sauce, season with salt and pepper.
- Remove from heat and garnish with green onions.
- Serve hot.
Notes
- Use any seasonal vegetables you like.
- Adjust soy sauce to taste for saltiness.
- For added protein, include tofu or cooked chicken.
