- 1 pound chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon sesame oil
- 2 green onions, chopped
- Cooked rice for serving
Instructions
- In a bowl, mix chicken with soy sauce and cornstarch. Let it marinate for 15 minutes.
- Heat vegetable oil in a pan over medium heat.
- Add the marinated chicken to the pan. Cook until browned, about 5-7 minutes.
- Add bell pepper, onion, garlic, and ginger. Stir-fry for another 5 minutes.
- Drizzle sesame oil over the mixture. Stir to combine.
- Remove from heat and top with chopped green onions.
- Serve hot over cooked rice.
Notes
- Make sure the chicken is cut into even pieces for uniform cooking.
- Don’t overcrowd the pan; cook in batches if necessary.
- Feel free to add other vegetables like broccoli or carrots.
