- 4 cups water
- 1 teaspoon salt
- 1 can chili (15 oz)
- 1 cup shredded cheese (cheddar or your choice)

- Optional toppings: sour cream, green onions, jalapeños
Instructions
- In a pot, bring 4 cups of water to a boil. Add salt.
- Slowly whisk in the polenta. Stir constantly to prevent lumps.
- Cook for about 15-20 minutes, stirring frequently, until the polenta is thick and creamy.
- In a separate pan, heat the chili over medium heat until warmed through.
- Once the polenta is cooked, stir in olive oil and black pepper for flavor.
- Scoop the polenta onto a plate or bowl.
- Top with heated chili and sprinkle cheese on top.
- Add optional toppings if desired.
Notes
- Stir the polenta continuously to avoid lumps.
- You can adjust the thickness of the polenta by adding more water if needed.
- Feel free to use your favorite type of cheese.
