Ingredients

  • 2 cups cooked shredded chicken
  • 8 tostada shells
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brush tostada shells lightly with olive oil.
  3. Place tostada shells on a baking sheet and bake for 5-7 minutes until crispy.
  4. Spread refried beans evenly on each tostada shell.
  5. Add shredded chicken on top of the beans.
  6. Top with lettuce, tomatoes, onion, and cheese.
  7. Bake for an additional 5 minutes until cheese melts.
  8. Remove from oven and add sour cream and salsa before serving.

  • Use leftover chicken or rotisserie chicken for convenience.
