A simple and delicious recipe for chicken stuffed peppers that anyone can make.


Ingredients

  • 4 bell peppers
  • 1 pound ground chicken
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix ground chicken, cooked rice, diced tomatoes, half of the cheese, garlic powder, onion powder, salt, and pepper.
  4. Stuff each pepper with the chicken mixture.
  5. Place the stuffed peppers in a baking dish.
  6. Cover the dish with foil and bake for 25 minutes.
  7. Remove the foil and sprinkle the remaining cheese on top.
  8. Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.

Notes

  • Use any color of bell pepper you like.
  • Feel free to add other vegetables to the stuffing.
  • Leftovers can be stored in the fridge for up to three days.
