  • 1 cup potatoes, diced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken and brown it on all sides.
  3. Remove chicken and set aside.
  4. Add onion and garlic to the pot. Sauté until onion is translucent.
  5. Add carrots, potatoes, and celery. Stir for a few minutes.
  6. Return chicken to the pot.
  7. Pour in chicken broth and add salt, pepper, thyme, and bay leaf.
  8. Bring to a boil, then reduce heat to low.
  9. Cover and simmer for 30-40 minutes, until chicken is cooked through.
  10. Remove the bay leaf before serving.
