- 1 lb chicken, cut into pieces
- 2 cups carrots, sliced
- 1 cup potatoes, diced
- 1 cup celery, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chicken and brown it on all sides.
- Remove chicken and set aside.
- Add onion and garlic to the pot. Sauté until onion is translucent.
- Add carrots, potatoes, and celery. Stir for a few minutes.
- Return chicken to the pot.
- Pour in chicken broth and add salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 30-40 minutes, until chicken is cooked through.
- Remove the bay leaf before serving.
Notes
- Use fresh vegetables for better flavor.
- Adjust seasoning to your taste.
- Let stew cool before storing in the fridge.
