  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Pour in the chicken broth and bring to a boil.
  5. Add shredded chicken, egg noodles, thyme, salt, and pepper.
  6. Reduce heat and simmer until noodles are tender, about 8-10 minutes.
  7. Taste and adjust seasoning if needed.
