Ingredients

  • 1 whole chicken (about 34 lbs)
  • 8 cups of water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 1 cup of noodles (optional)
  • Fresh parsley, for garnish

Instructions

  1. Place the chicken in a large pot and cover it with water.
  2. Add carrots, celery, onion, garlic, salt, pepper, and bay leaves.
  3. Bring the pot to a boil over medium heat.
  4. Reduce the heat and simmer for about 1 hour or until the chicken is cooked through.
  5. Remove the chicken and let it cool. Shred the meat and discard the bones.
  6. Return the chicken meat to the pot.
  7. If using noodles, add them to the pot and cook according to package instructions.
  8. Adjust seasoning to taste.
  9. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, let the soup sit for a while before serving.
  • You can add other vegetables like peas or corn.
