Ingredients

- 1 whole chicken (about 3–4 lbs)
- 8 cups of water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
- 1 cup of noodles (optional)
- Fresh parsley, for garnish
Instructions
- Place the chicken in a large pot and cover it with water.
- Add carrots, celery, onion, garlic, salt, pepper, and bay leaves.
- Bring the pot to a boil over medium heat.
- Reduce the heat and simmer for about 1 hour or until the chicken is cooked through.
- Remove the chicken and let it cool. Shred the meat and discard the bones.
- Return the chicken meat to the pot.
- If using noodles, add them to the pot and cook according to package instructions.
- Adjust seasoning to taste.
- Serve hot, garnished with fresh parsley.
Notes
- For a richer flavor, let the soup sit for a while before serving.
- You can add other vegetables like peas or corn.
- Store leftovers in the fridge for up to 3 days.
